It all began in a city in the southern Chinese province of Guangxi called Yulin. We (Nat and Dan) were living there for 2.5 years teaching English, and with just 16 hours of teaching a week we had a LOT of time to spend time with friends and explore all that the area had to offer...especially the food! The city was abundant with absolutely incredible delicacies, but by far Nat’s favourite was the dumpling. So much so, that her Chinese name is ‘jiaozi’ (the Mandarin word for ‘dumpling’). The Isle of Wight (our home in the UK) didn't satisfy our craving for dumplings, so we began to make them ourselves based on what we learnt from our students and friends in China...and a few dumpling making courses we attended. We originally stuck to the traditional pork, chive and water-chestnut filling. Then one night, after a few beers (we think, as we don't recollect the exact moment), we thought of the idea of putting ANYTHING DELICIOUS into the perfect little parcel. It quickly became our mission to try and adapt people's favourite dishes into the ultimate dumpling filling and create FLAVOUR BOMBS - prepare for a flavour explosion!
Our love for dumplings began up in the mountains of Yulin with friends making and wrapping dumplings!
